…using your offset spatula, spread the liquid isomalt and evenly cover the textured surface. Be careful not to dribble over the sides. (you don't want to seal in your Showpeel™)
Don't forget to drip isomalt over the 'finger hold' areas. Let the wing cool on the flat surface. We have something else in mind for the body.
As before, dribble isomalt on the dragonfly body and spread it evenly with an offset spatula.
Carefully peel the Showpeel™ from the curved isomalt.
Once cooled, you have a glistening dynamically curved body.
Enter the cake ring. At this point the head and main section of the body are already cool, but the dragonfly's tail can still be shaped. Arrange it in the cake ring, and set it aside to cool.
