Stéphane Tréand Demonstrates how to use two part sphere molds to encapsulate small spheres in larger ones for a stunning effect. Encapsulation is the technique to encase a color pattern or shape inside another. The best results are with a two-part mold. Shown here are the two halves of our 4” sphere mold. One half has been filled to the desired level and set aside to cool. Note: The specially designed registration points in the mold guarantee a tight fit. The 1.5” sphere is secured onto the sugar platform. Use a torch to flame off any air bubbles on the small sphere. This will prevent small bubbles from being trapped in your larger casting. Helpful Hint: Since the small and large spheres are similar in color, a dash of gold leaf will help define the shape. For a stronger effect, cast your 1.5” sphere in a contrasting color. After the mold is cool to the touch, separate the two sides to reveal your handy work. The 4” mold is secured with strong rubber bands (included). Fill the remaining space in the mold with isomalt. Remember to pour your sugar as cool as possible. This reduces the boiling effect inside of the mold.  which would melt the smaller shapes inside of the sphere. The finished color design.  A controlled design is poured. This creative control is only possible with a two-part mold Push the sphere out from the back. Make sure you are ready to catch it when it pops out! The interior of the molds are gloss smooth. However, the air within the boiling sugar can deposits micro bubbles on the surface of the spheres. A quick pass of the torch will melt any surface bubbles and dissolve the tiny seam line. Your spheres will look like glass! Chef Stéphane de-molds an isomalt spire in which he has encapsulated colored cubes. The spire will be used to help create the final showpiece. With a few sphere molds, a spire mold and a creative mind, the possibilities are endless.  To complete the composition, the 4” sphere is carefully put into place. Chef Tréand arranges the crystal-like pieces to create a dynamic surround for the sphere. (The fragments are secured onto a pre-cast circular base.)  The spire is deliberately broken into a variety of crystal-like fragments.
