New shapes for Pâte de fruit.
Pâte de fruit is a delicious treat made from fruit puree and sugar. It is one
of the many mediums suitable for casting into a mold.
Apricot
flavored pâte de fruit is portioned into the silicone mold while still warm. The silicone mold is
set on top of a small vibration table to ensure the liquid pâte de fruit flows into the detail.)

After the pâte
de fruit castings have cooled they are removed from the mold and are tumbled in a bowl of granulated
sugar.
( If you have having trouble taking pâte de fruit castings out of a mold, try putting the mold in the freezer for a few minutes then try again.)
Below, two different molds are combined to create this mini delight. Mold
(Mime Swirl) is the apricot pâte
de fruit casting which is set on top of a dark chocolate candy made from
mold (Urchin Bloom). Fast and delicious!
