Speedy Chef derron has already brushed tempered chocolate into the frame mold. He then fills the rest of the mold with tempered chocolate. Next he ensures the mold is evenly filled and has clean edges. Instead of using a vibration table, Jean luc uses tyhe time honored method to remove bubbles... smacking the tray! A quick visit to the freezer... no more than a few minute Chef Jean-Luc seperates the mold fromthe chocolate casting by carefull pulling the edge of the silicone away from the edge of the chocolate The chocolate frame de-molds easily Yes silicone molds can make chocolate shine.
