At this year’s pastry competition held at the International Restaurant & Food Service Show in New York, the theme was The Olympics: Winter Games.
Salvatore Settepani’s beautiful showpiece was all about clean lines and elegant hand sculpting. His interpretation of the winner’s floral wreath and the Olympic rings created a festive contrast. This stunning piece, along with his exceedingly tasty Winter Breeze Cake(a white chocolate mousse cream with a lime cream, blood orange center, almond dacquoise, craqueline finished with a caramel glaze.-close) and Winter Wonder bon-bons (a Kalamansi lime ganache, with a coffee cardamon ganache, finished with a chocolate couverture-close) earned Salvatore Settepani the silver medal for this year’s 21st Annual US Pastry Competition, hosted by Paris Gourmet. Great work Salvatore!
Salvatore Settepani is co owner and executive pastry chef of Pasticceria Bruno in New York.
